I am extremely happy to post the very first recipe given by you people! More specifically Georgia K. from Greece, sweet mother of two, send me this recipe.

I love working with oatmeal and I’ve been trying some time now to find the perfect recipe for oatmeal cookies. I guess I am done with experimenting. I tried them and loved them. There is no chance to understand you are eating an oatmeal cookie and kids eat them like crazy. My daughter loved them! Plus you can improvise and add grated nuts, raisins or even chocolate chips!

Oatmeal Cookies

Total Time: 1 hour

Serving Size: 30-40

Ingredients

  • 500gr oatmeal
  • 250gr. butter, room temperature
  • 2 cups sugar
  • 2 cups self-rising flour
  • 5 tablespoons orange juice
  • 1 teaspoon vanilla powder
  • 1 egg
  • 1 teaspoon salt
  • 1 tablespoon honey
  • ½ teaspoon baking soda
    Optional grated nuts, chocolate chips or raisins.
    IMPORTANT
  • For each ½ cup grated nuts you add 1 tablespoon orange juice.

Instructions

    MIXTURE 1
  • In a bowl combine oatmeal, flour and baking soda.
    MIXTURE 2
  • Beat butter with sugar until a fluffy cream. Add the egg and continue beating.
  • Gradually add orange juice.
  • Add honey, salt, vanilla and mix.
  • Incorporate grated nuts, chocolate chips or raisins with a spatula.
  • Combine the two mixtures and gently mix with your hands until a soft dough is formed. Mold cookies in desired shapes and bake in preheated oven at 180 for 20-30 minutes.
  • Enjoy!
