Hello everybody!! How are you? We finally realized that its summer!!! The temperature is rising and the last couple of days a heat wave hit us hard! The weekend all Athens was at the beach I think!!I was too and I ended up with a nice back burn!! That’s what happens when you chase around your 2-year-old!
Today I am sweating just by breathing!! The heat is unbearable! Still this does not mean that we lose our appetite!! No, no ,no never! So today I am more than happy to share with you my amazing and full of flavor meatloaf! This meatloaf is unlike any other!
As I have said I am not a vegetarian but I am not a meat enthusiast either. I only eat chicken and beef and only when cooked by me. Why is that? Because I use a lot of spices and herbs so there is no chance of tasting something bad!
So this recipe for meatloaf which is the same for mpiftekia (meatballs baked in the oven) is totally unique. I have experimented a lot and this recipe is a hit! Everyone is talking about my notorious mpiftekia and my meatloaf!! So much flavor in one bite!! If you decide to go ahead and try them, you will not be disappointed!
The filling is simple. Stuff it with things you like and already have in your fridge! Green peppers, cheese, ham and never forget cream cheese!! It makes a difference!
Along with the meatloaf I also bake potatoes, perfectly seasoned with chicken spice and mustard.
Now this chicken spice is not a random spice or the chicken spice you will find in a grocery store. I buy it from a specific spice store called to mpaxradiko in nea ionia. This spice is made by the owner, who mixes different spices to create it!! It’s his recipe and you will find only there! This spice goes well with all kinds of meat and potatoes. Especially the potatoes are so delicious with this spice!! I always use it.
Anyway my stuffed meatloaf has satisfied many tummies and everyone, and I mean everyone, love this recipe! I hope you enjoy it too! Filia!
