Frittata with mushrooms and Greek yogurt

Hi to all of you!!!! I bet you thought I was gone for good.. Lol.. I know I am a bit late but after vacation, came the time it took me to adjust back home and then came my daughters adjustment to school and the list goes on and on!!

How was your summer? Did you have fun? Did you have a good time?

My summer was, despite some minor disasters, perfect. The best I had in the last couple of years!! No relaxation with an unstoppable toddler αround but I can’t complain.

As I said before summer, we went to Ermioni but I am so happy because I had a chance to visit my village Oitylo, after so many years and I had a blast!! A blast that lasted two days but I still I can’t complain!!!

I don’t mean to brag but I will…  My village in Mani is one of the top destinations in Greece. So beautiful.. Aeropoli, Limeni, Oitylo…


Well enough with that, summer is over and we are back in our daily routine.. So let’s keep up with my culinary adventures…

This summer Frittata was a hit so I must do the beginning with this recipe.. It’s easy, super fast and delicious.A last minute meal to satisfy your hunger.

There were oh so many times I was bored to cook something complicated this summer, so Frittata was a very nice solution. Along with Greek salad and some feta cheese it was all we needed.


Normally Frittata is made with a dozen eggs.. Oh my God.. No… I have a kid you know and I am over 30 so I will pass..  Fortunately I experimented in reducing egg yolks for a healthier result and it worked just fine!! Really!!! I added some yogurt too and the result was awesome!!!

You can use any ingredients you like in Frittata because it’s basically an omelet. I tried to make it as healthy as possible so I kept it simple and tasty. Some French fries can never go wrong aside this dish! We all love French fries after all….

Frittata with mushrooms and Greek yogurt

Total Time: 30 minutes

Serving Size: 8 pieces

A very simple frittata and yet so delicious. It’s so easy and you can add any ingredient you like! Simply improvise!


  • 4 eggs
  • 4 egg whites
  • ½ cup Greek yogurt
  • 1 onion thinly sliced
  • 1 clove garlic diced
  • 1 can mushrooms (400gr)
  • Salt
  • Pepper
  • Olive oil
  • Butter
    Cheddar and mozzarella to sprinkle on top
    Use a frying pan that can be placed in the oven


  • Preheat your oven in 180 Celsius.
  • Heat 2 tablespoons olive oil in a frying pan and sauté mushrooms for 3 minutes. Add onion and garlic, sauté until translucent. Lower the heat and add 1 teaspoon butter.
  • Beat the eggs with yogurt and season. Pour over mushrooms.
  • Fry until the sides are golden brown.
  • Sprinkle 1 ½ cup cheddar and mozzarella and place in the oven.
  • Bake for 15-20 minutes, maybe less.
  • Let it cool for 10 minutes and serve!
