Cheesy eggplant rolls

Hi my friends and foodies!! What have you been up too?? I am very proud to present to you my amazing eggplant rolls!!

What’s up with the eggplants? Do you like them? I really don’t know… I think I do..Or not!


I like them in a few dishes I guess… I definitely love them fried and I love imam bayildi! That’s it.. The list is short! Lol! But now I will make the list longer with these rolls!

This recipe is so cheesy, in a good way, and garlicky and so well combined that you really don’t pay attention to the eggplants really. Even if you don’t like them I think you are going to like this recipe! Because the truth is, we must eat everything and especially vegetables!!

Cheesy eggplant rolls

Total Time: 2 hours, 30 minutes

Serving Size: 4-5

An amazing eggplant dish. Even if you are not an eggplant lover you will adore this recipe!!


  • 3-4 large eggplants
  • 250gr mozzarella (fresh), grated
  • 100 mozarella (dry), grated
  • 40gr spinach, thinly sliced (optionally)
  • 1 egg
  • 1 teaspoon garlic powder
  • Salt
  • Pepper
  • Olive oil
  • Grated cheese to top before baking
    Marinara sauce
  • 500gr slightly concentrated tomato juice
  • 1 teaspoon garlic powder
  • 1 teaspoon dried basil
  • 1 teaspoon dried mint
  • 2 tablespoons olive oil
  • ½ cup water
  • Salt
  • Pepper


  • Cut the eggplants lengthwise, make sure they are 1-2 cm thick.
  • Add parchment paper to a baking pan and place the eggplants. Season with salt and pepper and drizzle a bit of olive oil on top. Bake in a preheated oven (180 Celsius) until they are tender enough to roll.
    For the marinara sauce
  • In a saucepan add all of the ingredients and when it comes to a boil turn off the heat. Season with salt and pepper to taste.
  • Add grated, fresh and dry, mozzarella in a bowl.
  • Add garlic powder, salt, pepper, spinach and the egg. Mix very well and place in the fridge.
    Make the rolls
  • Pour 2/4 of the marinara sauce on a baking pan.
  • Fill each roll with 1-1/2 tablespoons of the filling. Roll and secure the filling. Place in the baking pan.
  • Repeat for all the rolls.
  • If there is any filling left spread it on top of the rolls.
  • Pour on top the remaining sauce, top with grated cheese and cover the baking pan with foil.
  • Bake in preheated oven (180 Celsius) for 40-50 minutes.
  • Serve!
